I love how simple this recipe is that I found in the Favorite Recipe of Indiana vintage community cookbook.

It’s simple and incorporates meat, veggies, and an excellent starch for a filling meal.

Busy Day Meal

Total Time: 1 hour 30 minutes
Quick and easy way to incorporate veggies, a starch and meat!

Ingredients

  • 1 lb ground beef
  • salt to taste
  • pepper to taste
  • 1 small onion, thinly sliced
  • 2 carrots, thinly sliced
  • 5 potatoes, washed and thinly sliced

Instructions

  • Grease skillet*
  • Place ground beef in skillet**, and salt and pepper
  • Top with layers of each of the onions, carrots, and potatoes.
  • Salt each layer (optional)
  • Cover skillet and place over a low heat 50-60 minutes.

Notes

*Notes on the recipe specify that you should not use an electric skillet for this meal.
**So, for me, I can't think of an instance that I just allow ground beef to cook - and then do not drain the grease off.  I would, personally, pre-cook the ground beef so that I could drain the grease and not cook that into my dish.  (Unless you are using extremely lean ground beef.)
